Cedar Planked Halibut with Herbalicious Compound Butter and Bell Pepper Medley

Fish makes a healthy and quick dinner and paired with a simple pepper medley it is a delicious and elegant meal. The pepper mix can be done ahead of time so all you have to do is cook the halibut for a speedy weeknight dinner.

We are flavouring the tender fish with a compound butter seasoned with Spyce Girlz Herbalicious Seasoning and Dip Mix which imparts fragrant and herbal notes to the halibut and complements the pepper medley exceptionally well. Cooking the fish on a cedar plank is not only easy, but adds a layer of exotic smokiness to this dish. Serve with a green salad for a very healthy and colourful meal.

Serves 2, Prep time: 15 min Cook time 45-50 min

For the Pepper Medley:

  • 4 Tbsp Farm Boy™ Extra Virgin Olive Oil
  • 1 small red bell pepper, cut into julienne (about 1 cup)
  • 1 small yellow bell pepper, cut into julienne (about 1 cup)
  • 1 small orange bell pepper, cut into julienne (about 1 cup)
  • 1 cooking onion, cut into thin julienne (about 1 cup)
  • 1 tsp Farm Boy™ Garlic Flowers
  • Salt and pepper to taste
  • 2 tsp Farm Boy™ Balsamic Vinegar
  • 2 Tbsp chopped parsley

 For the Halibut:

  • 1 cedar plank, soaked in water for 30-60 minutes
  • 1/4 cup salted butter, softened
  • 1 1/2 tsp Spyce Girlz Herbalicious Seasoning and Dip Mix
  • 1 Tbsp chopped parsley
  • 2 Farm Boy™ Boneless, Skinless Wild Halibut filets, thawed in refrigerator overnight
  • Parsley, basil or chives for garnish
  • Lemon wedges

 Instructions:

  1. In large frying pan, heat olive oil and pan-fry bell peppers and onion until they soften.
  2. Add garlic flowers and salt and pepper to taste. Cover partially and simmer, stirring every so often, until vegetables are very tender, 35-45 minutes.
  3. Add balsamic vinegar and parsley, adjust seasoning and reserve.
  4. In small bowl, mix softened butter with seasoning mix and 1 Tbsp parsley. You will have extra that can be reserved for another use (it’s great over roasted vegetables!).
  5. Pat dry halibut filets, place on cedar plank and spread seasoned butter all over fish (top and bottom).
  6. Meanwhile, preheat barbecue over medium high heat. When hot, turn off one side of the grill to make a two-temperature zone. Place cedar plank with fish on cool side of the grill and close the lid.
  7. Cook for 12 minutes, or until fish flakes easily and internal temperature reaches 158°F. Let rest for 5 minutes.
  8. Serve fish on a bed of bell pepper medley, garnish with herbs and serve with lemon wedges.
